Greetings from the kitchen - Episode 4

We take you into the realm of Saalbach Hinterglemm cuisine

In the "Gruß aus der Küche" (greetings from the kitchen) series, we introduce you to local chefs from Saalbach Hinterglemm, who also reveal their favourite recipe in words, pictures and, of course, video.

For the fourth episode, we are guests of Martin from Restaurant Jennerwein. He cooks an absolute classic for us: fillet steak.

 

The ingredients for 4 people

 

  • 1 courgette
  • 1 sweet pepper
  • 1 carrot
  • 5 mushrooms
  • 1 red onion
  • 1 kg fillet of beef
  • 0.6 kg baby potato
  • Herb butter
  • 100g butter
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 1 clove of garlic
  • pinch of salt & pepper
Preparation of fillet of beef

 

The fillet can be taken out of the fridge about an hour before the planned preparation time and stored at room temperature. Then heat a pan with clarified butter. The meat should sizzle when it is placed in the pan. First sear the fillet. We recommend searing the fillet for 30 seconds on each side. However, the exact frying time also depends on the thickness of the meat and the heat in your pan. After frying in the pan, the fillet of beef should be placed in the oven for 20 minutes at 120°C. Then leave the meat to rest in the oven for 3 minutes to make it even more flavourful.


Preparing the herb butter

 

Soften the butter. Crush the garlic and mix with salt and pepper. Add the chopped herbs, shape the butter into a roll in parchment paper and place in the fridge.

 

Preparation of grilled vegetables

 

  • Wash and clean all vegetables and cut into pieces, not too small, e.g. mushrooms only cut in half, peppers into 4 pieces and courgettes into thick slices.
  • Mix a marinade from the olive oil and spices, season to taste and marinate the vegetables in it.
  • Then place the marinated vegetables on a baking tray and bake in a preheated oven at 200 °C top/bottom heat for approx. 20 minutes until everything is crispy brown.
