Greetings from the kitchen - Episode 1

We take you into the realm of Saalbach Hinterglemm cuisine

In the "Gruß aus der Küche" (greetings from the kitchen) series, we introduce you to local chefs from Saalbach Hinterglemm, who also reveal their favourite recipe in words, pictures and, of course, video.

For the first episode, we are guests of Erwin Seebacher from the Wildwechsel restaurant in Saalbach. As a passionate hunter, Erwin naturally conjures up a tasty game dish for us: baked venison with broccoli and pumpkin.

 

The ingredients for 4 people


Saddle of venison with garnish

  • 800g saddle of venison
  • 10g venison seasoning - salt
  • 2 eggs
  • 20g pumpkin seeds
  • 10g panko breadcrumbs
  • flour
  • ½ litre sunflower oil for frying
  • 1 small hokkaido pumpkin - oven pumpkin
  • 1 tbsp chopped ginger
  • 1 tbsp honey
  • 1 tbsp paprika powder
  • 1 tbsp olive oil
  • 1 sprig of fresh rosemary
  • 16 pcs. broccoli florets

Cranberry chutney

  • 3 tbsp vegetable oil
  • 2 yellow onions
  • 30g ginger
  • 4 bay leaves
  • 1 tsp sugar
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 60ml apple cider vinegar
  • 600g cranberry jam (whole fruit)
  • 1/3 small chilli, dried
  • 15g garlic
  • 1 tsp Asian spice powder
