Greetings from the kitchen - Episode 2

We take you into the realm of Saalbach Hinterglemm cuisine

In the "Gruß aus der Küche" (greetings from the kitchen) series, we introduce you to local chefs from Saalbach Hinterglemm, who also reveal their favourite recipe in words, pictures and, of course, video.

For the second episode, we are guests of chef Helmut from the Forellenhof restaurant. The name says it all: it's the house dish, trout Hinterglemmer style.

 

The ingredients for 4 people


Trout Hinterglemm style
  • 4 freshly caught trout
  • Salt, lemon
  • Worcester sauce for seasoning
  • Crispy flour
  • Oil + butter for frying
  • Gratinating butter
  • 100g butter
  • ½ bunch chives
  • ¼ bunch parsley
  • 2 cloves garlic
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2cl cognac
  • 1 tsp pointed mustard
  • 1 dash Tabasco
  • 1 egg yolk
Side dishes

 

  • Potatoes

  • salt
