Greetings from the kitchen - Episode 3

We take you into the realm of Saalbach Hinterglemm cuisine

In the "Gruß aus der Küche" (greetings from the kitchen) series, we introduce you to local chefs from Saalbach Hinterglemm, who also reveal their favourite recipe in words, pictures and, of course, video.

For the third episode, we are guests of Elisabeth from the Rammernalm. She cooks us what she is known for far and wide: Pinzgauer Bladln.

 

The ingredients for 4 people

 

  • Ingredients for the dough for 4 people:
  • 400 g rye flour
  • 100 g wheat flour
  • 1/8 litre fresh milk
  • 40 g butter
  • salt
  • Vegetable fat for frying
Preparation of Pinzgauer Bladl

 

First place the rye and wheat flour in a bowl, add salt and mix together. Add the melted butter and hot milk and mix well. Remove the Remove the dough from the bowl and knead well on a work surface. Now form a roll about 3 fingers wide and cut into 2 cm thick slices. cut off. Dust the pieces of dough with flour and flatten a little by hand. flatten a little by hand. Then roll out with a rolling pin into round, hand-sized patties roll out to the size of a knife. Cut the patties apart in the centre, so that two crescent-shaped pieces are formed.


The fat needs to be sufficiently hot for the patties to rise nicely. This works best when the pan is placed directly over an open fire, like as I do on the Rammern Alm. Of course, this is not possible in every household. Alternatively, you can also put plenty of vegetable fat in a pan and to at least 200 °C. Fry the bladln briefly in it and turn turn once. Serve immediately and enjoy. As a side dish and filling there are many different options.
 

 

This is what the Bladl meal at the Rammern Alm looks like
